Meet Chef Billy "Butter" Joyce

Hello, my name is Billy Joyce. I was born and raised in the Point Loma area of San Diego.

In this beautiful beach community I developed my two greatest interests, surfing and cooking.

As a child I watched my grandfather cook constantly. He was a retired chef who inspired my interest in cooking and instilled in me the importance of fresh ingredients and being thorough in my preparation.

I am a California Culinary Academy graduate. I have over 20 years experience in the food industry. I started at the bottom and worked my way up. As a waiter and bartender I learned the importance of customer service. I learned that no matter how busy I am, I will always have time to listen to my client and make every effort to make their dining experience a pleasurable one.

Eventually my interest in cooking moved me into the kitchen. As a line cook and sous chef, I learned that hard work, food preparation, and fresh ingredients are all mandatory components of a great dining experience.

I took what I learned and funneled all these key ingredients into my own business. Surf Side Cuisine was established in 2000. I was inspired by a friend who asked me to help him with a small appetizer party for 50 people. I began to cater small events on my own and invested my profits into building my business. Throughout the  years I have met some wonderful and influential people, seen some spectacular homes, worked with the best food purveyors in town and further developed my culinary skills.

At the end of 2006 I wanted my business to take another step forward. I joined the American Personal and Private Chef Association where I received the information I needed to become a personal chef.

Today, Surf Side Cuisine has grown from a small catering service to a company that offers a wide variety of services such as Gourmet Weekly Meal Plans, Private Dinner Parties and "Over the Top In-house" catered events.

Over the years I have been influenced by several different cooking styles and some amazing chefs for example Chef Ming TsaiRoy Yamaguchi, Tyler Florence, etc. Also check out a short video  of me cooking for wealthTV.

Some of my other hobbies include surfing, skateboarding, fishing, traveling, mentoring young kids, and giving back to the community.
